Chocolate ice cream

2 cups whipping cream
2/3 cup condensed milk (7 oz)
2/3 cup chocolate syrup
1/2 tsp vanilla
1/3 cup chopped walnuts opt.
Combine whipping cream, condensed
milk chocolate syrup and vanilla. Place
in a ice cream maker till done. Makes
1 quart.

Baked apples

Take however many apples
you want peel them (opt)
half them and core them.
Place in metal baking pan.
add a tbs juice for each
apple. On each apple put
a tsp cinnamon and a tbs
sugar. Cover. Put in 350
degree oven and cook for
30 minutes or until tender.

Eggnog

6 egg yolks
1/4 cup sugar
3 cups milk
1 tsp vanilla
1/4 tsp salt
1 cup cream or
2 cups whip cream
6 egg whites
1/4 cup sugar
Beat egg yolks till blended.
Add 1/4 cup sugar, beating
at high speed until thick and
lemon colored. Mix milk in.
Then add vanilla and salt.
In a large mixing bowl beat
egg whites until soft peaks
form. Gradually add the
other 1/4 cup sugar. Beating
to stiff peaks. Fold in yolk
mixture and whipped cream
Sprinkle nutmeg over each
serving.

Pie filling

3 apples peeled
2 1/2 cups apple juice
1/2 cup cranberry juice
1/2 tbs cinnamon opt.
Cut apples into thin slices
Put juice apples and cinnamon
into a pan. Cook on high
for about 20 minutes. You
could eat plain or place in
raw pie shell to cook in 450
degree oven for 15 minutes

Pie crust

1 cup flour
1/2 cup oil
1/4 cup water
3 tablespoons sugar
Mix flour and oil together
until crumbly. Mix in water.
Roll out on floured surface.
Place in pan, add pie filling,
and cook accordingly to it's
recipe.

Oatmeal cookies

1 egg
1/2 cup oil
1/2 cup honey
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp apple pie spice
(if you want the pumpkin spice
you can use it)
1 1/2 cups oats
1 cup flour
1/2 cup chopped nuts opt.
Beat egg; add other liquid ingredients
and blend thoroughly. Stir dry ingredients
together, making certain there isn't any
lumps. Add to liquid mixture and mix it
well. Stir in oatmeal and nuts. Drop onto
a lightly greased cookie sheet. Bake at
325 degrees for 12-15 minutes. Enjoy.

Spanish Rice

6 slices bacon
1 medium onion finely chopped
1 green pepper finely chopped
1 28 oz can diced tomatoes
1 cup water
3/4 cup long grain rice
1 tablespoon salt
1 teaspoon chili powder
1/4 teaspoon pepper
Dash of pepper sauce
Cook bacon till crisp. Drain on
paper toweling crumble and set
aside. Drain fat from pan, reserving
4 tablespoons dripping. In bacon
drippings cook onion and green
pepper till tender. Stir in undrained
tomatoes, water, rice, 1 tbsp brown
sugar, Worcestershire sauce, salt,
chili powder pepper, and pepper
sauce. Cover; simmer till rice is
done and most of the liquid is absorbed
About 30 minutes. Top with bacon.

Pound cake

1 cup oil or butter
4 eggs
2 cups flour
1 tsp baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1 cup sugar
1 1/2 teaspoons vanilla
Mix flour baking powder salt and nutmeg.
In large bowl beat the butter or oil on
electric mixer for 30 seconds. Gradually add
sugar beating till fluffy, Add vanilla. Then
add eggs one at a time beating a minute after
each one. Gradually add dry ingredients beating
on low speed till combined. Dump batter in
a floured loaf pan. Bake in a 325 oven for 55
to 65 minutes or till done.

Apple bran muffins

muffin cups
2 eggs
1 1/2 cups bran cereal
1 cup rice milk/ milk
1/4 cup oil
1 tsp vanilla
2 small apples
1/2 cup chopped nuts opt.
2 1/2 cups flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
Preheat oven to 350 degrees. Put
cups in pan. In medium bowl, lightly
beat eggs. Stir in cereal, rice milk,
oil, and vanilla. Let sand 10 minutes
Meanwhile, peel apples and chop finely
Stir apples and nuts into the cereal
mixture
In large mixing bowl, combine flour
sugar baking powder baking soda and
cinnamon. Add cereal mixture to flour
mixture. Spoon into pan.
Bake 20-25 minutes.

Lemon Cake

2 1/2 cups flour
3 teaspoon baking powder
1 1/3 cups sugar
1 1/2 teaspoon vanilla
7 tablespoon oil
1 1/2 cups water
4 tablespoons lemon juice
Mix flour and baking powder in a bowl
Add sugar, vanilla, oil water and lemon
juice. Mix very thoughly. Pour batter
in a greased pan to bake for 45-55
minutes in a 325 degrees oven.

Oat cookies

1 mashed banana
1 cup brown sugar
1/2 cup of regular sugar
1/4 cup and 1 teaspoon oil
1 1/2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon of salt
3 tablespoons water
1 1/2 cups flour
Mix brown sugar, sugar, oil and water. Add the
banana and vanilla, then mix in the already pre-
mixed mixture of flour, baking soda, cinnamon,
and salt. Stir in the oats. Let stand a bit so the
oats can absorb the excess liquid. Bake at 350
degrees for 13 minutes.

Pumpkin Pie

1 (15 oz) can pumpkin
1 cup rice milk mixed with 1 teaspoon lemon juice
(real milk can be used too)
1/4 teaspoon salt
1 3/4 teaspoons pumpkin pie spice
(1 tsp cinnamon 1/2 tsp ginger 1/4 tsp cloves could be used too.)
1 teaspoon molasses
3/4 cup sugar
1/4 cup flour
1/4 cup oil
1 unbaked pie shell (see below recipe)
Mix all ingredients, except pie shell, and bake at 450 degrees for 15 minutes. Turn down heat to 350 degrees, and bake 40 to 50 minutes. cool and serve.Crust:
Mix 1 cup flour, 2 tablespoons ground flax (optional), 1/4 teaspoon salt, and 2 tablespoons wheat germ (optional.) Mix in 1/3 cup oil until completely blended. Then add 2 tablespoons rice milk (or real milk) until mixture holds together add up to another 2 tablespoons rice milk or cow milk.

Upside Down Pineapple Cake

1 2/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup pineapple juice/water
1/3 cup oil
1 tablespoon white vinegar
1 20 oz can pineapple rings
1/4 cup UNPACKED brown sugar
Mix flour, sugar, baking soda, and salt in a large bowl.
Pour juice of can of pineapple into a measuring cup it
should be about 3/4 cup add water to equal one cup
Arrange pineapple rings in 13 x 9 pan, sprinkle with
brown sugar.
Quickly mix wet ingredients into dry, stirring fast to
combine ingredients well and get out the lumps. Pour
into pan on top of the pineapple/brown sugar mix.
Bake for 25-35 minutes or until golden on top and a
toothpick inserted in the center comes out clean.
Then enjoy.

Banna Nut Bread

1 3/4 cups flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup sugar
1/3 cup oil (can be substituted for same amount butter)
2 eggs
2 tablespoons rice milk (regular milk can be used)
1 cup mashed ripe banana
1/2 cup chopped nuts
Stir together flour, baking powder, soda and 3/4 teaspoon
salt. Set aside.
In a mixer bowl beat sugar and oil with electric mixer till
light scraping sides of bowl often. Add eggs and the milk,
beating till smooth. Add flour mixture and banana alternately
to mixture, beating till smooth after each addition. Fold in
nuts.
Turn batter into a lightly greased 8x4x2 inch loaf pan. Bake
in a 350 degree oven for 60 to 65 minutes. Cool in pan for
10 minutes. Remove from pan; cool. For easier slicing, wrap
and store over night Makes 1 loaf.
